Leprechaun’s Delight

Leprechaun's Delight from Let's Get Together

Legend has it if you catch a leprechaun you can ask him for his pot of gold, OR maybe just for his dessert!

LEPRECHAUN’S DELIGHT
2 packages of Oreos (we used the mint ones but any kind will do)
8 ounces of cream cheese, softened
4 tablespoons of butter
1 cup powdered sugar
3 packages of 3.4 ounce instant vanilla pudding
6 cups milk
Green food coloring
12 ounces Cool Whip (or whipping cream if you prefer)
Chocolate gold coins (1 per person)
Half pint canning jars

Crush Oreos and set aside. In a mixing bowl beat cream cheese, butter and powdered sugar until smooth. In another bowl mix pudding and milk until well blended.  Add a few drops of green food coloring and mix it in.  Combine cream cheese and pudding mixtures.

Layer in jars: Oreo crumbs, green pudding mixture, then Cool Whip. Repeat. Top with a chocolate gold coin. And play some games, while you’re at it! Find some great ideas for some green-tinted fun here.

*If you don’t have half pint jars, just layer it in any old 9×13 pan.  (It doesn’t have to look pretty to taste delicious!)
