Nothing says summer like a fresh peach – the aroma, the juiciness sliding over your lips. I love eating them au naturel but it’s fun to pair it with our coconut fruit dip and a light crust. We served it up Sunday evening and the entire pan was emptied in minutes as everyone had some, then wanted “just a little bit more.”
Layered Coconut Peach Delight

A light and fruity dessert that's always a crowd pleaser!
Ingredients
- 1 1/2 cup flour
- 12 Tbsp. butter (1 1/2 sticks)
- 1/2 cup chopped nuts (optional)
- A batch of creamy coconut fruit dip
- 1 1/2 cups of puréed fresh peaches*
- 1 cup sugar
- 2 Tbsp. cornstarch
- 1/4 cup of cold water
- *Sliced peaches (I bought 10 peaches and there were plenty for the purée and for the sliced peach layer)
Instructions
- Mix flour, butter, and nuts together.
- Press in a 9x13" pan.
- Bake at 350 degrees for 15 minutes or until lightly browned. Let it cool.
- Make coconut fruit dip and spread over crust. You will probably have extra. (not a bad thing)
- To make glaze, purée in blender enough fresh peaches to measure 1 1/2 cups. Combine pureé and sugar in a small saucepan. Dissolve cornstarch in cold water; stir into fruit and sugar mixture.
- Boil until thickened then allow to cool slightly.
- Arrange LOTS of sliced peaches on top of the coconut cream layer. (I like it completely covered with peaches).
- Pour glaze over fruit while still a little warm so it goes down into the fruit.
- Serve immediately or we like it chilled too.
