Which Halloween candy do you hate the most? About five years ago a poll of candy consumers were asked by a market research firm to name their favorite treat brands.
By far, candy corn was the “most polarized brand and generated the most negative feelings.”
Even if you are a candy corn hater you will love these adorable and tasty tri-colored candy corn cupcakes. And they’re so easy – a sweet treat for any Halloween gathering!
Directions:
Line two muffin tins with with cupcake liners/papers. Spray inside the liner with non-stick cooking spray so you can easily peel off the liners after the cupcake has baked and cooled. Prepare a white or vanilla cake mix according to package directions.
Divide batter evenly between 2 bowls. Stir yellow food coloring into one bowl of cake batter. Use several drops to make it bright! Stir orange food coloring into the other bowl (or you can mix red and yellow food coloring into the batter – using a little more of the yellow).
Evenly distribute the yellow batter among the cupcake wells (about a heaping tablespoon per cup). Then top with the orange batter, making sure you cover the yellow completely.
Bake the cupcakes according to directions on the cake box and let them cool. Just before serving peel off the cupcake papers so you can see the cute candy corn colors.
Then use a mixer to whip a pint of heavy whipping cream with 1/4 cup sugar and 1 teaspoon of pure vanilla extract until stiff. Use a pastry bag with a star tip or a sandwich bag with a corner snipped off to put a dollop of whipped cream onto each cupcake, then add a candy corn. Makes 24 cupcakes.
