4 Muffin Tin Meals from Let's Get Together

When things are especially busy, I love a dinner that is quick and easy. (Sorry Martha!)   So, I turn to muffin tin meals – your kids will love them because they’re just the right size! And the guys in your house will just eat lots of them!

Muffin Tin Quiche

Ingredients
  1. 1 package of refrigerator biscuits
  2. 1/2 pound of sausage, or 1 cup of Canadian bacon or ham
  3. 2 cups of cottage cheese
  4. 4 eggs
  5. 1 small can of green chillies (optional but makes it SO good)
  6. 1 1/2 tsp. of parsley
  7. 1/2 cup Parmesan cheese
  8. Salt and pepper to taste
Instructions
  1. Brown sausage, drain and crumble or cube your ham.
  2. Divide each biscuit in half and mold in bottom of greased muffin tins (to cover the bottom).
  3. Put meat on biscuit.
  4. Combine remaining ingredients and pour on top of meat and biscuit.
  5. Bake at 375 degrees for 20 minutes until firm.
Notes
  1. We love these for dinner as well as breakfast. And if you have any leftover, they reheat well later.

Ingredients
  1. 2/3 cup dry bread crumbs
  2. 1 cup milk
  3. 1 1/2 pounds of lean ground beef
  4. 2 beaten eggs
  5. 1/4 cup minced onion
  6. 1 teaspoon salt
  7. 1/2 teaspoon sage
  8. 1/8 teaspoon pepper
  9. 1 clove garlic
  10. 3/4 cup grated Parmesan
Piquant Sauce
  1. 6 tablespoons brown sugar
  2. 1/2 cup ketchup
  3. 1/2 tsp. nutmeg
  4. 1 teaspoon dry mustard
Instructions
  1. Soak crumbs in milk.
  2. Beat eggs then add all other ingredients and mix well.
  3. Spoon into greased muffin tins.
  4. Cover with piquant sauce.
  5. Bake for 20 minutes at 350.

Ingredients
  1. 2 cups of cooked cubed chicken
  2. 1 package of refrigerator biscuits
  3. Barbecue sauce (our favorite is Sweet Baby Ray's)
  4. 1-2 cups of grated sharp cheddar cheese
Instructions
  1. Divide biscuits in half and mold in bottom of greased muffin tin.
  2. Mix your chicken with a few squirts of BBQ sauce and stir so it is evenly coated.
  3. Add a rounded spoonful of chicken mixture on top of the biscuit.
  4. Sprinkle with cheese.
  5. Bake at 350 degrees for 15 minutes.

Ingredients
  1. 1 small package of corn tortillas (5 inch)
  2. 1 pound of lean ground beef
  3. 1 package of taco seasoning
  4. 1 can of retried beans
  5. 1-2 cups of grated sharp cheddar cheese
  6. Shredded lettuce
  7. Cilantro
  8. Sour cream
  9. Salsa
Instructions
  1. Put 2 tortillas on a plate and microwave for 20 seconds to soften.
  2. Spray regular size muffin tins with cooking spray and place softened tortillas in muffin cups. (Do this with all 12 tortillas to fill up your muffin pan.)
  3. Cook and drain grease from ground beef, adding taco seasoning as directed.
  4. Put a spoonful of retried beans in bottom of tortilla.
  5. Then add taco meat and top with grated cheese.
  6. Bake at 350 degrees for 18-20 minutes.
  7. Let cool slightly before you try to remove them from the pan.
  8. Add shredded lettuce, cilantro, sour cream and your favorite salsa.
