Coconut Zucchini Muffins
- 3 eggs
- ¾ cup oil
- 1½ cup sugar
- 2 heaping cups of grated zucchini
- 2 tsp. vanilla
- 3 cups flour
- 1 Tbsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. baking powder
- ¾ cup shredded coconut
- Preheat oven to 375 F.
- Beat eggs well, then add oil, sugar, zucchini, and vanilla.
- Sift flour, cinnamon, baking soda, salt, and baking powder together.
- Add to wet ingredients.
- Fold in coconut.
- Spoon into well-greased muffin cups or foil baking cups, filling ¾ full.
- Bake for 20 minutes.
