Coconut Zucchini Muffins

Do you want to give your bumper crop of zucchini a little island flair? Try our COCONUT ZUCCHINI MUFFINS!
Ingredients
  • 3 eggs
  • ¾ cup oil
  • 1½ cup sugar
  • 2 heaping cups of grated zucchini
  • 2 tsp. vanilla
  • 3 cups flour
  • 1 Tbsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. baking powder
  • ¾ cup shredded coconut
Instructions
  1. Preheat oven to 375 F.
  2. Beat eggs well, then add oil, sugar, zucchini, and vanilla.
  3. Sift flour, cinnamon, baking soda, salt, and baking powder together.
  4. Add to wet ingredients.
  5. Fold in coconut.
  6. Spoon into well-greased muffin cups or foil baking cups, filling ¾ full.
  7. Bake for 20 minutes.
